Sandy Asked for this one...

Here's my recipe for Cold-pack Coleslaw... this is one of the things that is going to get me through the next couple of weeks!

Small Recipe... makes enough for 8 servings

1/2 head of cabbage, shredded
2 large carrots, shredded (I use both the slicer and large shred for texture)
1/2 C green pepper, diced
1/4 C fine diced red onion... you can use yellow or even spring onion
1/3 C sugar
2 T. vegetable oil
1 tsp. celery seed
1/2 tsp. kosher salt
1/4 tsp cracked black pepper
1/2 tsp parsley flakes

In a large bowl, combine cabbage, carrots, green pepper, and onion. In a jar with a tight fitting lid, combine dressing ingredients: shake well. Pour over cabbage mixture and toss. Cover and chill for 4 hours before serving.
